Vinification

Le Bouzy Rouge :

The grapes are hand made sort out. The berries fall into the vat where they are slowly and naturally going to fermented.

Sulfites slightly added when the grapes arrive at the press house, at the racking and the bottling.

Ageing on laths, in bottle : 18 months minimum

Dosage : 7 gram per liter – BRUT
